Brown Sugar Boba Souffle Pancakes Recipe

Ingredients:

  • 1 cup store-bought pancake mix
  • 1/2 cup milk
  • 2 large eggs, separated
  • 1 tsp vanilla extract
  • 1 tbsp sugar
  • Butter or cooking oil
  • 2 tbsp brown sugar syrup
  • 20g cooked tapioca pearls

How to make:

 

STEP 1

In a bowl, combine pancake mix with milk, egg yolks, & vanilla extract - mix until smooth.
STEP 2
In a separate bowl, beat egg whites until stiff peaks - add sugar gradually while beating.
STEP 3 
Gently fold egg whites into pancake batter mix - careful not to deflate mixture.
STEP 4
Lightly grease a pan with cooking oil or butter.
STEP 5
Spoon the pancake batter onto the pan, forming small, thick pancakes.
STEP 6
Cover with a lid & cook for 3-4 minutes or until golden brown.
STEP 7
Gently add some tapioca pearls on top of each pancake.
STEP 8
Carefully flip pancakes & cook for 3-4 minutes or until golden brown.
STEP 9
On a plate, serve pancakes & add more tapioca pearls on top.
STEP 10
To Finish
Drizzle with brown sugar syrup.
